Hadn't looked at it before, but was watching my transmission temp when running an errand this morning. 20 minute drive with 5 minutes at highway speeds and the rest 50 and below. On the drive there, transmission temp peaked at 127 which seems low? Once I got home (20 minutes back the other way), topped out at 177. Is this normal/good?

that is normal, and a very good item to point out for everyone.

Just because your engine oil and coolant temp are up to temp, transmission and gear temps take a lot longer to get there. For longevity of gears, best to make sure trans is up to a good temperature too before beating on it.
